Cinnamon Brown Sugar Banana Bread

Oh fall, sweet fall, how I can almost feel the chill in the air. We have had quite the unexplained summer season here in the Pacific Northwest. this weather has felt like anything but summer weather and for that, I must shift my focus towards the upcoming season, and my favorite season, FALL. For me, the fall season is the prime time for baking and what better way to start than with delicious banana bread?! Today, I wanted to share with you, my twist on the classic banana bread. With a cinnamon brown sugar ribbon through the middle and that sugary crunch on top, this banana bread gets me all sorts of ready for the fall season.


Recipe

3 ripe bananas

½ cup butter, melted

¾ cup white sugar

1 egg

1 tsp. vanilla extract

1 tsp. baking soda

1 pinch of salt

1 ½ cup all-purpose flour

1/3 cup brown sugar

1 Tbsp. cinnamon



Preheat oven to 350 degrees F. Grease and flour a loaf pan, set aside for later. In a large bowl, beat melted butter and white sugar until fluffy. Add mashed bananas, egg and vanilla extract just until combined. Add baking soda, salt and flour and mix together. Pour half the batter in the prepared loaf pan and sprinkle half of the brown sugar and cinnamon on top. Continue by pouring the rest of the batter into the pan and top with the rest of the brown sugar and cinnamon. Bake for 50-60 minutes or until toothpick, when inserted into the center, comes out clean.
