Easy Rotisserie Chicken Salad


Hi friends.. it's been a while! I'm back today, sharing a delicious and healthy recipe with you! If you don’t know already, living in a small town has it challenges, especially when it comes to resources. The town over from us has a Costco, which we take advantage of a couple times a month to stock up on bulk items. I usually pick up bulk meat (because Costco bacon is the BEST), produce, rice, almond milk & mixed nuts. I also like to pick up a rotisserie chicken while I’m there because not only are they absolutely delicious fresh from the store, but you can use the meat for so many recipes! Today, I’m going to share one a my favorite lunch recipes using rotisserie chicken: Healthy Rotisserie Chicken Salad. Don’t worry, if you don’t have a rotisserie chicken, you can also used canned chicken for this recipe. You can go either way and it will still be delicious!


Recipe


2 cups shredded chicken

2 Tbsp mayonnaise (Primal Kitchen makes a great dairy-free mayo)

½ cup halved grapes

½ apple, diced

½ tsp garlic salt

¼ tsp cayenne pepper (just enough to add flavor without the heat)

Salt and pepper to taste


Mix together all ingredients in a large bowl and use as filling for your sandwich, which I recommend on homemade sourdough bread, or pair with your favorite crackers. Store in the fridge for up to one week.



Don’t have fresh fruit, but you have raisins… sweet! Want to add some slivered almonds for extra crunch, sure! Add diced red onion and chopped pickles for a different take on this recipe. This recipe would also be great with chopped celery, too! Make it with the flavors you love! That’s the thing I love about this recipe, it’s so versatile.
