Buffalo Cauliflower Tacos

I wanted to start by making it known that we are not vegetarians, however these have become some of our favorite go-to tacos. At first I was hesitant as to whether I would like them but the cauliflower acts as the perfect meat substitute! It doesn't even seem like you are eating all vegetables. Check it out!
Here's my recipe:
(for the cauliflower)
1 head of cauliflower
3/4 cup buffalo sauce
2 Tbsp avocado oil
1 tsp paprika
pinch of garlic salt
2 Tbsp honey
(for the toppings)
6 medium size flour tortillas
1 cup fresh spinach
1/4 sliced red onion
1/2 Roma tomato
green onion for garnish
ranch dressing
Start by preheating the oven to 400 degrees, and then break apart cauliflower into a large bowl. Note: we prefer smaller "bite-size" pieces of cauliflower, but cauliflower size is up to your preference.

Combine 1/4 cup buffalo sauce, avocado oil, paprika and garlic salt into a small bowl. Drizzle sauce over cauliflower and toss to evenly coat each piece.

Spread cauliflower onto a cookie sheet and bake for 20 minutes.

Just before cauliflower is finished, heat the rest of the buffalo sauce and honey in a large skillet. Add baked cauliflower and simmer for 5 minutes.

Next up, TOPPINGS! This is the part where you can be creative. If spiciness is not your thing, lighten up on the buffalo sauce, or even go for a more mild hot sauce. However, add more buffalo sauce (as well as paprika) if you want an extra kick! Another option is to mix it up with toppings. These were the toppings we had in the kitchen tonight, but I have also used green and red cabbage, avocado, cilantro and blue cheese.
