No Bake Cookies


One reason I love this recipe is because it's quick and easy to make and really just requires a few kitchen supplies! Clean up is a breeze! Can I get an amen?! I will always love a good chocolate chip cookie, but sometimes the work to get them so yummy doesn't satisfy my inner lazy girl. My inner fat girl really just wants cookies and she wants them NOW! That being said, these are the perfect last minute cookie! It really only takes 40 minutes from melted butter to melt in your mouth!


Here's the recipe:

*Yields 25 cookies... or 24 if you're a taste tester like me!

1/2 cup butter

2 cups granulated sugar

1/2 cup whole milk

4 Tbsp unsweetened cocoa powder

pinch of salt

1/2 cup peanut butter

2 tsp vanilla extract

3 cups quick-cooking oats



To begin, add the first five ingredients (through the salt) to a 4-quart saucepan. Bring to a rapid boil and let boil for 1 minute.


Remove from heat.



Stir in the peanut butter and vanilla extract until smooth, then stir in the oats.


Using a medium cookie scoop, drop onto parchment paper.


Let cool until set, about 30 minutes. Cookies can be stored in an airtight container at room temperature for up to 2 weeks. After you try these cookies though, I promise they won't last two weeks! These have become the favorite cookie in our household. Hubby described them as chocolate peanut butter fudge with oats and that's exactly what they are! Perfection! They are also a great, quick cookie gift to make for friends or family. After all, who doesn't love cookies?!
