Irish Corned Beef & Cabbage


In honor of St. Patrick’s Day and my very Irish heritage, I wanted to share with you this super simple slow cooker recipe for Corned Beef & Cabbage! Although I didn’t eat this dish very often as a child, I have come to love and look forward to this dish every year. So much so, we usually eat it a couple times throughout the year. Corned beef and cabbage is one of Hubby’s all-time FAVORITE meals. Combine that with a super simple recipe and I approve! Tender meat and potatoes, accompanied by cabbage and carrots create some of the best smells a kitchen could have.


Recipe:

(Serves 2-3 people)

2 lbs corned beef

4 large russet potatoes, chopped into slightly larger than bite size pieces

4 large carrots, sliced

½ head of green cabbage, chopped

½ yellow onion, diced

Water or vegetable broth

*Note: The size of beef is determined by the amount of mouths you will be feeding! I like to plan for ¾ of a pound per person.

Layer a crockpot or instant pot with potatoes, onions, meat, carrots & cabbage. Pour your choice of water or vegetable broth about ¾ of the way up to the top. Cook on low for 5-7 hours or on high for 3-4 hours.


Can I just say that crockpot and instant pot recipes might the best cooking hack in the world? It takes so much of the work out of making dinner AND it makes for easy cleanup! If you don’t have a crockpot or instant pot (which is preferred since it also has the slow cooker function), I highly recommend getting one.

I will admit that this recipe isn’t totally from scratch. I prefer to buy the prepackage corned beef from the grocery store because it already has all of the perfect seasonings for this dish. Maybe someday I’ll muster up the courage to create my own spice mix but for now, I’m going to take advantage of the store bought mix! They make it so convenient for a working woman like myself. After a long work week, this is the ultimate comfort food to eat. An “Irish” dish plus my comfy couch, and of course the perfect chick flick, “P.S. I Love You”.  What more could a girl need?
