Cranberry Oat Bars


I'm proud to say I have found my favorite sweet snack, one that I can enjoy without totally falling off the wagon. These cranberry oat bars are a great for a quick on-the-go breakfast or afternoon snack to hold you over till dinner. This recipe is a collaboration of several recipes I found. There wasn't one recipe that I loved, so instead, I did what I do best and made my own! I wanted an oatmeal bar that had substance to it, but wasn't overly complicated. My husband would say this is more of a thick oatmeal cookie than a bar, but the word "bar" sounds healthier, right? These bars turned out exactly how I thought... delicious! It was hard to eat just one! Confession: this recipe makes 12 bars in an 8 x 8 pan, but I had to taste test one (or three)!



Recipe


makes 12 bars

1 cup butter (melted)

2 Tbsp honey

1/2 cup brown sugar

2 eggs

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp sea salt

2 cups old fashioned oats

2 cups all-purpose flour

1 cup dried cranberries


option: Add chocolate chips, walnuts or coconut. The best part about this recipe is that you can add extras to meet your taste bud's needs!


Preheat oven to 350 degrees. Line an 8 x 8 pan with parchment paper. This will make it easier to get the bars out later!


In a large bowl, mix melted butter, honey and brown sugar. Add eggs, vanilla extract, and mix just until fully incorporated. In a separate bowl, mix baking soda, salt and flour. Add dry ingredients to wet ingredients, but don't over mix. Fold old fashioned oats and cranberries. Pour dough into the parchment lined pan. Bake for 25-30 minutes until golden brown. Store in a sealed container for up to a week at room temperature or place in the freezer for longer.
