Guilt-free Sweet Potato Chips

Confession: I’m a total snacker. Sweet or savory, I love snacking. Thankfully, we eat pretty healthy.. minus the box of girl scout cookies in the freezer, those are for an emergency! I’ve recently become a big fan of baked sweet potato chips. They're that perfect, salty snack or side dish without all the guilt. They are a healthier alternative to regular potato chips or fries. Sweet potatoes (or yams as these are) are a great source of fiber and vitamin C.

Recipe


1 sweet potato (yam)

3 Tbsp avocado oil

Sea salt

Preheat oven to 400 degrees. The best to get evenly thin potato slices is to use a mandolin slicer. Don't worry if you don't have one. There's no need to freak out - a sharp knife will do just fine! Just remember, the thinner the potato chips, the crispier they will be! In a large bowl, pour oil over sweet potato chips and toss to coat. Make sure to use a good quality oil that does well under high heat. We use avocado oil for pretty much everything these day!

Place each slice onto a parchment lined baking sheet. Sprinkle sea salt over the top of the chips.

Bake for 20-25 minutes, flipping them over half way through, until edges have started to curl up. Place on a cooling rack and enjoy!

Some chips may end up more crispy while others are thicker. Regardless, they were utterly delicious! Pair with a good Pico de Gallo or simply enjoy by themselves! You'll thank me later :)
